I read it as "sans cœur" because that's how I view Nathalie, through a primarily Adrien-centered lens. It could be "sang de cœur" shortened up, if her name is meant to be read from her own perspective and her devotion and loyalty. Only Astruc knows, I'm sure. For purposes of a Kingdom Hearts fusion, though? I'm absolutely going with "Nathalie Heartless."
