From the various analysis of ruins that I've seen, at least some of the takeout places were more like the grocery store deli counter in that there were several selections but much less in the way of short order. So you show up and if there's no rooster-in-wine stew left, maybe it's bullock-with-grains for you today, unless you want to go around the corner and hunt out something else. So, a lot of long cooking tasks and hot work, but the stress is merely kitchen work and/or customer service, without having to worry about transmitting orders correctly to the cooks and put them together in a decent amount of time.
